Salted Egg Spaghetti with Giant River Prawn

How to make the salted egg spaghetti with giant river prawn:
Giant River Prawn
- Cut the prawn into butterflies and remove the veins.
- Steam for 15 minutes.
- Ready to serve.
Salted egg yolk sauce
- Add 2 tbsp butter or oil. Add the chopped garlic, and stir-fry until fragrant.
- Add the mashed salted egg yolk, and fry until fragrant and foamy. Add in the chili, garlic, curry powder, and curry leaves until fragrant.
- Add Evaporated Creamer and simmer until it thickens.
- Add in chicken stock powder, and sugar to season.
- Add cornstarch water and cook until it thickens.
Pasta
- Cook spaghetti in a saucepan boiling, add 2 drip oil and salted water (1 tsp of salt with 1 liter of water), following packet directions, until al dente.
- Drain the spaghetti.
- Put the spaghetti in the salted egg yolk sauce mixed well.
Lastly, the rest of the salted egg sauce goes over the giant river prawn.

Ingredients
SALTED EGGS YOLK SAUCE
4-5 Salted Egg Yolks, steamed and mashed
4 cloves Garlic, chopped
2 tablespoons Butter
2 sprigs of Curry Leaves (approximately 20-25 leaves)
1 Bird’s Eye Chili, finely sliced
½ can Evaporated Creamer
1 teaspoon Powdered Chicken Stock
1 teaspoon Sugar
⅓ tablespoon Curry Powder
1 tablespoon Cornstarch + 5 tablespoons water (if necessary)
- PASTA
100g Spaghetti (No.5)
1 teaspoon salt
2 drip Oil
- PRAWN
1 pcs Giant River Prawn
Directions
- Prawn
- Cut the prawn into butterflies and remove the veins.
- Steam for 15 minutes.
- Ready to serve.
- Pasta
- Cook pasta in a saucepan boiling, add 2 drip oil and salted water (1 tbsp of salt with 1 liter of water), following packet directions, until al dente.
- Drain the pasta.
- Salted egg yolk sauce
- In a wok, add the butter. Turn the heat down to low heat until the butter is completely dissolved. Turn the heat up to high, add the chopped garlic, and stir-fry until fragrant.
- Add the mashed salted egg yolk and fry until fragrant and foamy. Then add chili, curry powder, and curry leaves until fragrant.
- Pour in the Evaporated Creamer and simmer until it thickens.
- Add in chicken stock powder, and sugar to season.
- Add cornstarch water and cook until it thickens.
- Take a set of 3-4 tablespoons of salted egg sauce.
- Lastly,
- Put the spaghetti in the salted egg yolk sauce mixed well.
- The rest of the salted egg sauce goes over the giant river prawn.
Notes
- If you want the sauce more thicken, pour the cornstarch water and stir until thick before putting in the pasta. Trust me, it tastes even better.
